Mapishi: Mayai ya Kuoka/Oven Scrambled Eggs

Hii ni njia ya kuandaa mayai kwa ajili ya kifungua kinywa inayotumia zaidi na watu wa magharibi. Ni njia nzuri kwetu sisi ili kuleta ladha zaidi mpya mezani na kuipa familia afya bora.
Mahitaji:
-Siagi iliyoyeyushwa vijiko 2
-Mayai 6
-Chumvi nusu kijiko
-Maziwa nusu kikombe
Jinsi ya kuandaa
-Washa jiko la kuokea (oven) liwe na joto la 175 C au kama unatumia jiko la mkaa liandae kabisa.
-Vunja mayai weka kwenye bakuli na yachanganye vizuri pamoja na chumvi. Weka maziwa changanya vizuri.
-Weka siagi kwenye sufuria au chombo maalum cha kuokea, mimina mchanganyiko wa mayai na oka kwa dakika kumi bila kufunika.
-Geuza geuza halafu rudisha kwenye oveni oka kwa dakika nyingine kumi au hadi mayai yaive.

Preparing oven scrambled eggs is simple and the food is very nutritious even though it is not commom in Tanzania.
Ingredients:
-2 tablespoons butter
-6 eggs
-1 teaspoon salt
-1/2 a cup milk
Instructions:
-Pre-heat the oven to 175 C
-Pour melted butter into a baking dish. In a large bowl, whisk together eggs and salt until well blended. Gradually whisk in milk. Pour egg mixture into the baking dish.
- Bake uncovered for 10 minutes, then stir, and bake an additional 10 minutes, or until eggs are set. Serve immediately.

Jinsi ya kutoa Mifupa kwenye kidali cha Kuku/How to Debone a Chicken Breast

Wakati mwingine mtu anaweza kuhitaji kupika nyama ya kuku isiyo na mifupa, mfano mzuri ni 'chicken fried rice' ambayo ilielezewa jinsi ya kuandaliwa kwenye post iliyopita. Kama ndo hivyo hata usiwaze sana kwa sababu leo utajifunza jinsi ya kufanya hivyo na ni rahisi sana.
  • Weka kidali kwenye ubao wa kukatia upande wa ngozi ukiwa juu.

Uandaaji wa Banda la Vifaranga/Preparing a Brooder

  • Banda la kuku ni sehemu muhimu sana ya ufugaji wa kuku kwa sababu vifo vingi hutokea kwa vifaranga. Ni muhimu kuwa makini sana wakati wa uandaaji wa banda la vifaranga na kuhakikisha mahitaji yote muhimu yanazingatiwa.
  • Banda linaweza kujengwa kwa matofali au mbao. Ukubwa wa banda unategemea idadi ya vifaranga, kifaranga mmoja anahitaji takribani 1/2 futi ya mraba.
  • Banda lipuliziwe dawa ya kuua vijidudu masaa 24 kabla ya kuwasili kwa vifaranga.
  • Pumba za mpunga au maranda ya mbao yatandazwe kwenye sakafu ya banda kisha kuwekwe magazeti juu ambayo huwasaidia vifaranga kutembea tembea kuifata sauti ya magazeti hivyo kukifikia chakula na kukila.
  • Kuwe na chanzo cha joto katika banda kama vile balbu za umeme, jiko la mkaa, mafuta au gesi kwa ajili ya kutoa mwanga na joto (takribani 95F) katika banda.
  • Nunua vifaa vya kulishia na maji kwa ajili ya vifaranga, vifaa vya maji visiwe vikubwa kuzuia vifaranga kuzama. Vifaa visafishwe vizuri kabla ya kuanza kutumika hata kama ni vipya.
 
  • As you may know, a brooder is one of the most important keys to raising chicken successfully since many deaths happen to chicks. It is very important to carefully prepare a brooder. 
  • A brooder may be made of bricks or wood. The size depends on the number of chicks wone wants to raise, one chicks requires about 1/2 a square foot.
  • A brooder should be fumigated 24 hours before the arrival of chicks.
  • Cover the brooder floor with wood chips or rice peels then put newspapers on top to encourage chicks to walk following the sound they make after stepping on the papers and find their food.
  • Provide heat by using a lamp, stove or electric bulbs.
  • Provide feeders and water-ers that are for chicks to avoid drowning (when the water-ers are too big) and they should be thoroughly cleaned even if they are new.

Mapishi: Chicken Fried Rice

Mara nyingi tumezoea kula viporo (chakula kilicholala) lakini mtu anaweza kuamua kuwa tofauti. Badala ya kuupasha tu wali uliolala anaweza kuandaa 'chicken fried rice' na kuonekana kaandaa chakula kingine kabisa tofauti na kile kilicholiwa siku iliyopita.
Mahitaji:
-Kidali cha kuku 1
-Wali uliopikwa na kukaa siku nzima (Kiporo) vikombe 5
-Mafuta ya kula vijiko 4

-Kitunguu 1
-Kitunguu saumu 1
-Karoti 1
-Pilipili hoho 1/2
-Bizari kijiko kidogo 1
-Pilipili manga kijiko kidogo 1
-Green beans
-Chumvi kijiko kidogo 1
-Njegere kikombe 1
-Mayai 2
-Soy sause kijiko kidogo 1
-Vitunguu vya kijani
Jinsi ya kuandaa:
-Pika wali kisha uache upoe au tumia kiporo.
-Andaa vipande vya nyama ya kuku visivyokuwa na mifupa.
-Changanya vipande vya kuku na pilipili manga, bizari na chumvi. Changanya hadi uwiano uwe sawa.
-Weka sufuria jikoni kisha kaanga nyama ya kuku hadi iwe ya kahawia. Ikiiva, weka pembeni na funika vizuri isipoe.
-Bandika sufuria jikoni weka kitunguu maji, kitunguu saumu, njegere zilizochemshwa, pilipili hoho, green beans na carrot. Geuza geuza kwa muda wa dakika 2.
-Pasua mayai, mwagia kwenye sufuria kisha koroga haraka haraka ili vichanganyike na yaive vizuri.
-Ongeza wali koroga ili kuchanganya vizuri, weka kuku, endelea kukoroga takribani dakika 2 hadi 3.
-Ongeza soy sause kwenye chakula, koroga vizuri ichanganyikane na chakula mpaka maji maji yakauke kwenye chakula na wali uwe na rangi ya kahawia.
-Pakua chakula na ukipambe uwezavyo tayari kwa kuliwa. 
Chicken fried rice is a simple dish to make it may give the left over rice another delicious taste avoiding wastage by just throwing it away.
Ingredients: 
-1 chicken breast
-5 cups previously cooked or left over rice
-4 tablespoons vegetable oil
-1 chopped onion
-1 teaspoon Ground garlic 
-1 chopped carrot
-1/2 bell pepper
-1 teaspoon cummin powder
-1 teaspoon black pepper
-1 teaspoon salt
-1 cup boiled peas
-2 eggs
-Green beans
-Green onions 
Instructions:
-Cook rice and leave it to cool or use left over rice.
-De-bone the chicken breast and cut it into small pieces.
-Mix evenly the chicken, cumin powder, black pepper and salt.
-Fry the chicken till golden brown then cover it and put aside.
-Fry onions, garlic, carrot and peas in a saucepan for 2-3 minutes.
-Add bitten eggs and keep stirring till cooked.
-Add the rice, chicken and keep mixing.
-Add soy sauce and cook till all the water is dry.
-Garnish the food and serve.

Sifa za Banda Bora la Kuku

Ili mfugaji afanikiwe na apate faida anayoitegemea ni lazima awe na banda bora la kufugia kuku wawe wa kisasa au wa kienyeji. Sio kila banda linalojengwa ni bora kwahiyo ni lazima mahitaji halisi yazingatiwe ili ufugaji uweze kutoa matokeo bora yanayotarajiwa na mfugaji.
  1. Hewa na mwanga: Kama walivyo viumbe wengine wote, kuku wanahitaji hewa safi na mwanga wa kutosha kwahiyo banda lao lazima liwe na mambo. Ukubwa wa madirisha ya kuingiza hewa unategemea mahali banda lilipo, kama ni sehemu yenye joto inabidi yawe makubwa na kama ni sehemu ya baridi madirisha yasiwe makubwa sana. Jaribu kuzuia upepo mkali kuingia ndani ya banda la kuku ama sivyo kuku wataugua ugonjwa wa mafua na niumonia na vifaranga vinaweza kufa  kwa ugonjwa wa baridi
  2.  Usafi wa banda: Banda ni lazima liwe safi na kavu muda wote. Lijengwe sehemu iliyoinuka kuzuia maji kuingia na sakafu iwekewe pumba za mchele na maranda ya mbao kupunguza ubaridi kwa kuku.
  3. Paa la banda: Paa la banda inabidi liwe madhubuti ili kuzuia maji ya mvua na mwanga wa jua kuingia kwenye banda. uezekaji nao inabidi ufanywe kwa makini kuhakikisha maji ya mvua hayadondokei ndani kupitia madirishani.
  4. Nafasi ndani ya banda: Banda linatakiwa kuwa na nafasi ya kutosha kuepusha kuku kubanana, kuwekea vifaa vya malisho na kumsaidia mfanya usafi kufanya kazi yake kirahisi.
  5. Mgawanyo bandani: Banda bora inabidi liwe na sehemu tofauti kwa ajili ya stegi mbalimbali za ukuaji, sehemu ya vifaranga ambayo inatakiwa kuwa na joto sahihi kwa ajili ya ukuaji wa vifaranga na mwanga, sehemu ya kuku wakubwa ambao wanahitaji joto la kawaida ambapo kuku wa nyama na mayai inabidi watenganishwe na watu wengi huwa wanasahau chumba cha kuku wagonjwa. Mkate kuku vipande vidogo kisha muoshe kwa maji masafi.
Changanya viungo kwenye chombo kama bakuli kisha weka vipande vya kuku vilivyokatwa katwa. Changanya vizuri kuhakikisha viungo vinachanganika vema na vipande vya kuku.
Funika bakuli na uache mchanganyiko kwa dakika 60 kuviruhusu viungo kuingia vizuri kwenye vipande vya kuku.
Weka vipande vya kuku kwenye vijiti kama inavyoonekana pichani.
Nyunyizia mafuta ya kupikia kidogo kwenye mishikaki halafu choma kwa moto wa wastani hadi iive.
Andaa mishikaki yako kwa ajili ya kuliwa na wali, ugali, chipsi au chochote upendacho.

We normally see beef kebabs everywhere we go and many people know how to prepare those but chicken kebabs can also taste so deliciously if one knows how to prepare them very well. Now here is a chicken kebab recipe. 
Ingredients:
1/2 kg Chicken breasts (skinless and boneless)
1 teaspoon ground ginger
1/2 teaspoon ground garlic
Pepper for taste
1 teaspoon salt
Lemon juice
1 teaspoon cumin powder 
1/2 teaspoon powdered black pepper
2 tablespoons vegetable oil
Instructions:
Cut the chicken into small pieces and wash well with clean water. In a medium bowl mix all the ingredients together except cooking oil. Cover the bowl and leave the mixture for sixty minutes. Put the chicken pieces into a stick as seen on the photo. Sprinkle the cooking oil on the kebabs and grill with medium heat. Serve hot with rice, chips or anything you like.

Aina za Kuku

Mtu anapotaka kuanza ufugaji wa kuku anaweza kuwa anajiuliza afuge kuku wa aina kwa sababu kuna aina tofauti za kuku. Leo tutaelezea aina ambazo hufugwa mara nyingi hapa Tanzania na kuzichambua kidogo ili kumpa mwanga mfugaji kuamua afuge aina ipi na hata mlaji kuamua ale nyama ipi.
  1. Kuku wa kisasa: Hawa ni kuku ambao kosaafu (breed) yao imetengenezwa nje ya Tanzania. Mara nyingi huwa kuku wazazi wa hawa kuku wa kisasa huwa wanaingizwa nchini kutoka Uholanzi, Uingereza au Marekani. Hawa kuku wazazi ni kuku maalum ambao kazi kubwa imefanyika kutengeneza kosaafu yake. Kosaafu hizi hutengenezwa na wataalam wa hali ya juu ndio maana kuku hawa wana tabia tofauti na wale wa kienyeji; wale wa nyama wanakua haraka sana na wa mayai wanataga zaidi ya wale wa kienyeji. Lakini kuku wa kisasa wana uwezo mdogo wa kustahimili magonjwa na ladha ya nyama na mayai yake sio nzuri kama ile ya kuku wa kienyeji. Kama ambavyo nimegusia, kuku wa kizungu wapo wa nyama (broilers) na wa mayai (layers). Kuku wa nyama hufugwa kwa kulishwa chakula maalum na kuwa tayari kuuzwa baada ya wiki sita hadi nane. Bei yake sokoni ni kati ya Tshs 5000-7000. Kuku wa mayai wao huanza kutaga takribani wiki ya 20 na hendelea kutaga hadi wiki ya 80 kama watakuwa wametunza inavyotakiwa. Trei moja la mayai huuzwa kwa Tshs 7000-10000 kulingana na upatikanaji wake kwa wakati huo.
  2. Chotara: Hawa ni kuku mchanganyiko wa kisasa na kienyeji. Wanapatikana kutoka kwa kuku jike wa kienyeji na dume wa kisasa. Chotara wao huwa na tabia za kuku wa kienyeji na kisasa. Wanachukua tabia za kuku wa kisasa kwenye uzito na ukuaji. Chotara huwa wakubwa na ukuaji wake ni wa haraka ukilinganisha na wa kuku wa kienyeji. Pia wanachukua tabia ya kuku wa kienyeji kwenye ustahimilivu wa magonjwa, ladha ya nyama na mayai na uwezo wa kuatamia. Kuku hawa humuhakikishia mfugaji faida ya haraka. Bei yake sokoni ni kuanzia Tshs 10,000 kulingana na ukubwa wa kuku na mayai trei Tshs 12,000-15,000.
  3. Kuku wa kienyeji: Hawa ni kuku wenye asili ya hapa kwetu Tanzania mfano mzuri na kuku maarufu wa singida waitwao Kuchi. Kuku hawa wanapendwa zaidi kwa sababu ya ladha ya nyama yake na mayai. Na wananauwezo mkubwa wa kustahimili magonjwa, kujitafutia chakula na kuatamia. lakini mara nyingi kuku hawa wana miili midogo na hawatagi kwa wingi sana. Hata hivyo biashara ya kuku wa kienyeji ni nzuri kwa sababu wanapatikana kwa nadra sana. Bei ya kuku na mayai ya kienyeji ni kama ile ya chotara.
Biashara ya kuku kwa ujumla inaweza kuwa nzuri tu kwa kuku wa aina yoyote endapo mfugaji atafuga kitaalam na kufuata vizuri kanuni zote za ufugaji.

Did You Know, the Fried Chicken Stereotype in America/ Je Wajua, 'Fried Chicken' Hutumika Kibaguzi Marekani

Wakati sisi huku kwetu (Tanzania) kuku tunakula zaidi siku za sikukuu na sherehe, huko marekani neno 'Fried Chicken' hutumika kibaguzi. Linahusishwa na wamarekani weusi. Historia inaeleza kwamba watu wengi weusi wanapenda sana kuka 'fried chicken' kwa sababu enzi za utumwa weusi walikuwa wanruhusiwa kufuka kuku tu na sio mnyama au ndege mwingine yoyote. Na hata baada ya utumwa watu weusi walikuwa masikini sana kwahiyo hawakuweza kununua nyama nyingine ya aina yoyote kwa sababu ya gharama zaidi ya kuku na walipendelea kukaanga hao kuku ili iwe rahisi kuitunza nyama kwa siku kadhaa because hawakua na uwezo wa kununua friji. Kutokana na hali hii Marekani neno 'Fried Chicken' kwa mmarekani mweusi ni kama 'tusi' yani ni sensitive kwahiyo mtu inabidi awe makini anapolitumia.
Kilishawahi kutokea kisa fulani mwaka 2013, mcheza golf anaeitwa Garcia alimtania mwenzio Tiger Wood ambae ni mmarekani mweusi kwamba atamualika nyumbani kwake ili waongelee tofauti zao na kutakua na 'fried chicken'. Tiger alisema '' the comment was wrong, hurtful and clearly inappropriate." Garcia aliomba msamaha though. In the United States, fried chicken has stereotypically been associated with African Americans. The reasons for this are various. Chicken dishes were popular among slaves before the Civil War, as chickens were generally the only animals slaves were allowed to raise on their own.

On two occasions the golfer Tiger Woods has been the target of remarks regarding fried chicken. The first occurred in 1997 when golfer Fuzzy Zoeller said that Woods should avoid choosing fried chicken for the Masters champions' dinner the following year; the second when golfer Sergio García was asked in a press conference in 2013 whether he would invite Woods to dinner during the U.S. Open to settle their ongoing feud. García said: "We will have him round every night . . . We will serve fried chicken," which Woods said was "wrong, hurtful and clearly inappropriate". How to Cut Up a Whole Chicken/ Jinsi ya Kukata Kuku Vipande-vipande

Many people find it hard to cut a whole chicken into pieces. They either do it wrongly or use a lot of time. Here is the easiest way to do it.
Watu wengi wanapata shinda kukata kuku vipande vipande kabla ya kupika. Hii inasababisha watu kutumia muda mwingi kufanya kazi hiyo ndogo. Leo naleta kwenu njia rahisi ya kufanya kazi hii. 
  • Remove excess: Grab a chicken, a cutting board, and a sharp knife. Remove everything inside it like intestines, gizzard and the heart. 
    Ondoa vilivyoko ndani, shingo na miguu: Andaa kuku alienyonyolewa, kisu kikali na ubao wa kukatia. Anza kwa kukata shingo, miguu, kutoa utumbo na kila kitu ndani ya kuku kwa kutengeneza uwazi karibu na paja.

  •  Remove thighs and legs: Using a sharp knife, slice the skin in between the drumstick and body. Find the joint and pop it out of it socket with your hands. Finish the cut to remove the leg from the body. Cut through the joint between the thigh and the leg.  You can also use your hands to pop this joint out of its socket first. Repeat on other side.

  • Remove the spine: Slice down each side of the ribs with a sharp knife. 
  • Kata mgongo: Kata pande zote mbili za mbavu kutokea kwenye mkia kuelekea shingoni kutenganisha mgongo na upande wa 'breasts' za kuku.

  • Separate breasts: Place knife on the breastbone and apply pressure to cut the breast into two halves.

Kanuni za Ufugaji wa Kuku

Kawaida watu wengi huanza tu ufugaji bila kufata kanuni zozote au kuangalia kama mazingira yanayowazunguka yanaruhusu. Kwa nchi zilizoendelea kuna kanuni kabisa na sheria zinazoelekeza jinsi ya watu kufuga. Kwahiyo leo nmeandaa kanuni tano ambazo mtu anaweza kufata anapotaka kufuga kuku. 
Here are five things to be aware of before you embark on your chicken keeping journey.

  1. Majirani/Neighbours: Kabla hujaanza ufugaji hakikisha hutosababisha usumbufu wowote kwa jirani zako. Mara nyingi watu huwa wanafuga kuku na kuwaachia tu kiasi kwamba hao kuku wanakuwa kero na usumbufu kwa majirani. Wanachafua vibaraza vya watu, wanakula chakula na nafaka, wanaharibu vitu. Mfugaji anatakiwa kuhakikisha hasababishi usumbufu kama huu kwa kuchukua hatua kama kuwajengea kuku wake uzio.
  2. Wanyama na wadudu/Vermin: Chakula na maji kwa ajili ya kuku vikiachwa ovyo ovyo huvutia wanyama wadogo wadogo na wadudu kama panya na mende. Hii inaweza kusababisha matatizo ya kiafya. Kwahiyo wafugaji hasa wanaofuga kienyeji wanatakiwa kuhakikisha chakula cha kuku hakiachwi ovyo. 
  3. Harufu/Odour: Kinyesi cha kuku kinatoa harufu kwahiyo ni vizuri kuwa na mpango mzuri wa kufanya usafi kwenye mabanda ya kuku na kuhifadhi vizuri kinyesi cha kuku, mbali na majirani kabla ya kukitumia kama samadi ili kutokuwasumbua na harufu mbaya.
  4. Kelele/Noise: Kuku hasa majogoo ya kienyeji wanawika sana asubuhi na kama wanafugwa kwa wingi zile kelele zinaweza kuleta usumbufu kwa majirani. Ni wajibu wa mfugaji kuhakikisha majirani zake wako 'comfortable' kwa kutafuta njia za kupunguza kelele kufika kwao.
  5. Ufugaji bora/Chicken welfare: Mfugaji ahakikishe anao uwezo wa kuwahudumia kuku kikamilifu, kuwapa chakula na maji, malazi, kuwatibu wanapopata magonjwa na kuwakinga na hatari zote zinazoweza kutokea.
Hizi ni kanuni chache tu ambazo mfugaji anaweza kuzifata katika safari yake ya ufugaji, japokuwa yapo mambo mengi tu ya kuzingatia ambayo watu wengi huwa tunayapuuza. Hebu tuanze kuufikiria ufugaji kivingine ili faida iongezeke na amani pia.
